Salsify is rich in vitamins and nutrients

The vitamin-rich salsify is one of the oldest winter vegetables of our latitude. Unfortunately, however, it has been somewhat forgotten recently, although it can be stored in cool cellar rooms for a long time (until spring), is extremely digestible and also has an extremely high nutritional value.

The only disadvantage is the cleaning of the vegetable stalk from the black skin, which hides a white, asparagus-like stem that reveals a nut-like taste.

" Tip: Steam the salsify for about a quarter of an hour in salt water - with a little lemon juice - before peeling. Keeps hands clean and simplifies cleaning - quench with cold water! Then put in fresh vinegar or lemon water so that there are no stains on the vegetables. You can also use it to clean your fingers again.

Cultivation

" Location
A moist, well loosened, humus-rich soil is necessary for the cultivation of the salsify. The annual seed is sown already in March, with the salsify prefers a sunny location.

"Keep enough distance
It should also be noted that the seeds are spaced far enough apart so that the roots do not interfere with each other when growing.

" Tip: Salsify should never be grown after tomatoes or carrots. Combinations with cabbage, spinach or lettuce are possible without any problems.

Maintenance

" To water
Salsify needs a lot of moisture during growth, which is why it needs to be watered regularly. If the soil is compacted by the moisture, it should always be loosened a little with the rake.

"Fertilize
It is advisable to fertilize the salsify from time to time and to remove its flowers as soon as possible.

"Harvest
From November, when the leaves are slowly fading, you can start harvesting until February. To do this, the roots must first be carefully excavated from the ground with a spade so that they do not break. Afterwards, the salsify can be pulled out of the earth relatively easily, whereby you should wear gloves.

If milky juice emerges from the roots, this is a sign of absolute freshness. Which means that fresh vegetables are always available in the garden over the long winter months!

" Tip: In very cold winter months, the salsify can also be covered with straw to protect them a little from frost and voles.

"Possible diseases
Salsify is minimally susceptible to mildew or voles, which also enjoy the delicious taste of the root vegetables.
